Roshan’s Recipes- Sri Lankan Dhal

Want a new twist on your favorite lentil dish? Try our tropical Sri-Lanan take on this dhal dish. Our version is thick and creamy with a subtle kick of chilli. Traditionally served at breakfast with Coconut Sambol and delicious any time of the day.

Ingredients & Method

• Coconut oil for pan
• 3-4 curry leaves
• Cardamom x 6 pieces
• Cinnamon stick (crushed)
• 1⁄2t fennel seeds
• 1⁄2t mustard seeds
• 1t ginger (crushed)
• 1t garlic (crushed)
• 4T Spanish onion (finely sliced)
Cook for 2 minutes, then stir through:
• 1 cup light coconut milk
Cook until yellow in colour (max 20 mins), then add:
• 2 cups thick coconut milk – see how that goes and add one + cup if
needed
• 1⁄2t turmeric powder
• 1t chilli powder
• 1T curry powder
• 1⁄2t roast curry powder
• 2T sliced tomato
• 1T sea salt
• 3 cups washed red lentils (not soaked,if you’re using yellow then soak for one hour prior or even overnight)
For decoration/garnish:
• Coconut oil for pan
• Curry leaves
• Mustard seeds
• Cinnamon (crushed)
• 1T Spanish onion (finely sliced)
Caramelize all in pan and then pop on top to serve!
